160g smoked salmon (80g for 2 servings), 1/2 handful of radish sprouts, 2 cucumbers, (based on 1.5 bowl of rice) 1Ts vinegar, 1/2Ts sugar, 1/3ts salt, wasabi, capers, tartar sauce Clean the cucumber by rubbing it with salt then wash it. Scrape off the bumps with a knife. Dissolve sugar and salt in vinegar to make seasoning for rice. Prepare cooked rice in advance. If you cook it with a small piece of kelp, it makes the sushi taste better. Add the vinegar seasoning while the rice is still hot. Mix well then leave it to cool, allowing the seasoning to seep into the rice. Slice the cucumber thinly with a peeler. (Thick slices won't roll very well.) 1 cucumber makes about 15 slices. Cut the radish sprouts short. Slice the smoked salmon. Gently mold the rice into small rice balls. Wear disposable gloves to prevent the grains from sticking to your hands.
